Earlier this week, I decided to start having smoothies again, at least a couple of times a week. They’re simple, yummy, and are never quite the same since I vary ingredients. Looking at the picture would you guess there’s at least 1 cup of baby spinach and half an avocado in this? I didn’t think so. 😉 Oh, and our 19 month old drank it up!
Today’s smoothie via the Vitamix includes:
1/2 frozen banana
1+ cups frozen mixed berries
1/2 C whole-milk vanilla yogurt (plain works, too)
a few splashes of pineapple juice
a 3-second sploosh of whole milk
1+ cups fresh baby spinach (fill up the rest of the blender)
a little warm water to get it all moving through the blender
